Is Diabetes Reversible Part II

It was great getting feed back from each and everyone of you last week! It’s a great privilege to serve you.

I told you last week… We are having a cooking class today! Yes, you heard me right!

So (drum roll) let’s bring out the pots and pans and get to work!

Firstly if you read to the end, you have a special gift waiting for you.

BREAKFAST

Ingredients

  • A cup of rolled oats
  • 2 cups of water
  • Cinnamon to taste
  • Coconut milk
  • A pinch of sea salt

Directions:

  • Pour water and oats in a pot
  • Boil for 10-15 mins or till desired consistency is achieved.
  • Add a pinch of salt.
  • Serve in a bowl, you can add coconut milk and cinnamon

Cinnamon is a great sweetener alternative which helps in lowering blood sugar.

Next you can have a bottle of juice about an hour after breakfast

Ingredients

  • 5 medium Carrots
  • A handful of celery
  • Quarter of a medium sized cabbage

Directions:

  • Wash all vegetables and scrape the back of carrots and remove any cabbage leaves that are rotting.
  • Depending on your juicer, you may need to cut carrots into large long slices to make It easy to juice.
  • Put the carrots, cabbage and celery into the juicer and juice all together
  • Serve cold or drink immediately

LUNCH

Ingredients

  • Lettuce
  • Parsley
  • Spinach
  • Cabbage
  • Beets for a little color,
  • Cucumbers
  • Zucchini.

Directions:

  • Wash the vegetables
  • Dice the firm vegetables
  • Chop the leafy greens into big chunks and arrange them layer by layer.
  • Sprinkles each layer with parsley.
  • On the topmost layer, spread the chopped beets
  • Sprinkle cinnamon and a table spoon of vinegar.
  • Toss it at least three times.
  • Cover it. Allow to stay for at least 15 mins.
  • Then it’s ready to serve.

*You can refrigerate it for later, you can also add almonds, cashew or walnuts to elevate the taste.

DINNER

Don’t forget you have to get it ready and eat before 7pm, which will be Elkris oats with vegetable soup.

Ingredients

  • 2kg meat substitutes/ tofu/ mushrooms/ soy meat substitute
  • Bitter leaf (wash to desire)
  • Half cup of ground Crayfish
  • Vegetable stock cubes/ stock gotten from steamed veggies
  • Yeast for seasoning
  • Ogiri (a product of castor seeds)(optional)
  • Dry fish (2 medium sizes)
  • Stock fish head (1 big size)
  • Palm oil (about 25cl)
  • Sea Salt and pepper to taste.
  • Cocoa-yam (pounded)

Directions:

  • Boil  water for 10 to 15 minutes alone
  • Use this to wash the leaf if this is for bitter leaf soup.
  • Par boil meat substitute with as little water as possible
  • Add previously well washed dry fish, stock fish and cook until it is tender,
  • Add more water, palm oil, ground crayfish, pepper, salt and pepper to taste.
  • Stir and allow boiling.
  • Taste to make sure you have the desired soup taste).
  • Then add the pounded cocoa yam (at this point you can also add the ogiri now.
  • Cook till the cocoa yam dissolves, (this would likely take about ten minutes)
  • Add bitter leaves, stir, taste
  • Cook for three to two minutes.
  • Your soup is ready.

Next

  • Boil about 2 cups of water
  • When water is boiling over, add a cup of oats and stir in for about 10- 15 mins.
  • Add oats till desired consistency is reached.
  • Allow to cook for about 10 mins or until desired consistency is reached.
  • Serve with soup.
